Thanksgiving Made Easy

Thanksgiving made easy!

With everything going on in the world, I’m pretty thankful to take some time out to just be thankful! And Thanksgiving is the perfect time to do that…but this year, I want to be as stress-free as possible. And—lucky you!– I’ve decided to share my Thanksgiving Day menu (complete with a new mashed potato recipe you’ll want to try) with you here!

Menu for a party of 8

Garlic and Herb Turkey

Glazed Ham

Cranberry Sauce

Green bean casserole

Mashed potatoes

Pumpkin Pie

Perfect Mashed Potatoes

3 lbs. Yukon gold potatoes, peeled and cut into quarters

1 tsp. salt

8 Tbsp. heavy cream

4 Tbsp. butter

2 Tbsp. milk

Salt and pepper to taste

Put peeled, cut potatoes in a medium saucepan and add enough cold water until they’re covered by at least an inch. Bring to a boil on high heat. Reduce the heat to low and cover. Cook for 15-20 minutes, or until you can poke through a potato with a fork. While they’re cooking, melt the butter and warm the cream in the microwave. Drain the potatoes when they’re done cooking and place them in a large bowl. Pour the heated cream and butter over the potatoes. Mash the potatoes and then use a strong wooden spoon to beat further. Add milk and beat the potatoes until they’re smooth, but not too much—they’ll end up glue-like. Add salt and pepper to taste and serve!

One thing to keep in mind if it’s your turn to host lunch or dinner: let everyone pitch in! I like to provide the main food and the must-have pumpkin pie, but I let the guests help out with an appetizer, side dish or other sweet treat! This time of year especially, the more the merrier! (And that always pertains to food in my book!)
